The ability to search by category is one way to search for courses but certainly not the only one.
If you do not know which category to look under but have an idea of the course you are after, try entering the name into the search field (along with a city) for the best possible results.
The category list is for people who prefer to use this way to search for courses and information and by no means must you use it.
